My Recipe System
Since I love to cook, my friends always ask me where I get my recipes...how I decide what to make...how I organize my recipes. So I thought I'd share my "system" here. I have lots of cookbooks that I love to peruse...and a recipe book (one of the binders where you copy down your favorite recipes, etc.) but this is the system that best works FOR ME. And I am thankful to my mother-in-law for giving it to me.As a gift for one of our wedding showers, Brent's mom "Kammy" (what our kiddos call her) gave me a copy of The Joy of Cooking accompanied by this lovingly made little system that she uses. I have to be honest...I was a little overwhelmed when I saw it (and she assured me that if it wasn't something that worked for me, her feelings would not be hurt if I abandoned it.) I didn't use it for the first few years of our marriage, mostly because I didn't have a place to store it.
But enough about its origins, here's the deal:
The system is made up of 3x5 inch index cards, divider cards, and is contained in a Rubbermaid drawer divider that is 6" x 15" wide (and about 2 inches deep). (You can find these things at any office supply store and/or Target or WalMart.) One day, I'm hoping Brent will build me a wooden box (with a lid) for safer transport during moves...but for now the plastic divider works perfectly.
At the beginning of the file, I have blue dividers for five weeks. When I actually do my meal-planning weeks at a time (which is rare, I promise you), I browse through my file, selecting recipes for each day. I use another index card and write each day of the week, followed by the recipe(s) for that day and then file them behind the particular week.Each day, I move the recipe(s) for that day to the front of the file box, as indicated above, for easy reference during the day. As you can see above, tonight we're having Sweet and Tangy Roasted Pork Tenderloin. (This also makes it easy to let Brent know where the recipe is for the days when he offers to cook!)
(Kammy originally set this up using seven dividers, one for each day of the week. But I find that I often only have one recipe a day...and I just steam veggies or slice fruit or make rice, etc. So it was more helpful to me to do weekly dividers for "meal planning in advance" purposes.)
The most used part of my system are the actual food categories:
My categories consist of: Appetizers, Beverages, Breakfasts, Breads, Candies, Cakes, Casseroles, Cereals, Cookies, Crock-Pot, Desserts, Eggs/Cheese, Fondue, Foreign Food, Frostings, Frozen, Fruits, Marinades, Meats, Pancakes, Pasta, Pastries, Pizzas, Pies, Poultry, Preserves, Rice, Salads & Dressings, Sandwiches, Sauces/Syrups, Seafood, Non-Food Recipes, Soups, Special Mixes, Vegetables.Most all of these are the ones that Kammy set up for me. I've added a few that I needed. When I copy down a recipe, I file it in the appropriate category. Some of the categories overlap (like breakfast and pancakes...poultry and casseroles) but I just go with whatever category I would most likely look in.
After the food categories are several different "event-style" categories. I have to be honest, I haven't really used these much. But if you're are a big hostess (like both my Mom and my mother-in-law), these categories can be helpful.They include (as seen above in the yellow tabs): Teas, Big Group Meals, Brunch, Picnics, Celebrations, Cold Light Meals, Hot Light Meals, Company Meals. (Brent's parents were missionaries when he was younger and they always had lots of company coming and going, so I know these categories were very helpful to her.)
Behind the yellow dividers, you'll see red dividers. These include some miscellaneous categories: Pantry List, Helpful Info. (tips), Freezer, and Tablescapes.
When I get a new magazine that contains recipes I want to try, I tear them out. If I find a recipe online that looks good, I print it. Then I place them in the middle of an ordinary folder with pockets.You can see a glimpse of my blue-grey folder under the Southern Living magazine in the picture above. It has WAY too many recipes in it. Every so often, I go through all the recipes in the folder. I throw out any that no longer appeal to me, any that are duplicates of recipes I already have, etc.

Always room for Tex-Mex
While they were here, I ended up cooking a TON of new recipes. For me, it seems easier to try something new when I have someone around to help keep the children busy/happy. It's much easier to whip together the "old reliables" when you have lots of helpers and lots of noise and not so much undivided attention to devote to a recipe.
Tex Mex Fiesta Steak with Guacamole Butter and Fiesta Black Bean Salsa
3 Tbsp. tequila
1 tsp. grated lime rind
3 Tbsp. fresh lime juice
1 Tbsp. olive oil
1 ¼ tsp. McCormick Chipotle Chile Pepper
1 tsp. Mexican oregano
¾ tsp. black peppercorns
½ tsp. ground cumin
½ tsp. kosher salt
2 tsp. minced garlic
4 (1” thick) Top Sirloin Steaks (6 oz.)
Guacamole Butter
Fiesta Black Bean Salsa
1. Stir together the first 10 ingredients (through garlic) in a large bowl until blended. Add steaks to marinade, turning to coat. Cover and chill 8 hours or let stand room temp. for 2 hours.
2. Remove steaks. Bring marinade to a boil in a small saucepan over medium heat and boil 2 minutes.
3. Heat a grill pan over med-high heat. Grill steak 5-6 minutes per side, basting occasionally with marinade.
4. Remove steaks and place on serving plate. Dollop each steak with Guacamole Butter. Spoon Salsa around steaks and serve immediately.
Guacamole Butter
1 small avocado
2 green onions, chopped
2 Tbsp. chopped cilantro
2 Tbsp. sour cream
¼ tsp. kosher salt
pinch cayenne pepper
1. Chop avocado and place all ingredients in food processor or blender and process until smooth. (I use an immersion blender.) Place in bowl and chill until ready to serve.
Fiesta Black Bean Salsa
1 can black beans, rinsed and drained
1 cup frozen whole kernel corn, thawed
½ cup chopped red bell pepper
¼ cup chopped green onion
¼ cup chopped cilantro
2-3 jalapeƱos, seeded and minced, optional
3 Tbsp. fresh lime juice
1 Tbsp. olive oil
1 tsp. minced garlic
½ tsp. kosher salt
½ tsp. ground pepper
1. Stir together in large bowl. Cover and let stand at room temp. until ready to serve.

Remembering her today.

My friend, Kristi, passed away on Friday morning. Her funeral and memorial service are today. The above excerpt to me, perfectly describes Kristi, in her life and death.
Ever since I discovered in late October that she had Stage IV breast cancer, my days have begun and have ended in prayer for her. Hoping against reality that God would heal her. That we would witness a miracle. That she would continue beside her husband, raising her three little boys.I could pray in that manner because I know and trust that He is able. There is no doubt in my mind. And yet, that was not His will for her life. That was not part of His plan. He chose to bring her home...and while I can't understand why that was best...can't wrap my earthly mind around that...I know that it's true and right and perfect. Because He is Truth and Righteousness and Perfection. And I rejoice with such JOY knowing that she is with her Lord and Savior...in the midst of Glory that we do not yet even imagine.
It's been several years since I last saw Kristi, but when I close my eyes, I can see her radiant smile and hear her voice...especially her laugh. I've been reminiscing old times...remembering hilarious moments and joyful moments and quiet moments spent together. I will miss her...but I look forward to when I will join her...and so many other loved ones...in His Glory.
This last excerpt, also from The Valley of Vision, has been an encouragment to me and a reminder of our life here on Earth and all that we have to look forward to.

Absolutely Gorgeous Outside
While our boys went to play 9 holes of golf, my girls and I got Sonic drinks (vanilla Dr. Pepper for me, Strawberry Slush for Hadleigh) and then played outside on the swingset.

The Aftermath
- grumpy children in the morning after still being awake at 9:50pm. (Madeleine went down around her usual time but got transfered from the pack and play to her crib when the others went to bed around 9pm. Not a happy baby.)
- children with extreme loss of self control when they are either hungry or tired or things don't quite go their way.
- lots of whining voices. (mine included, to be honest.)
- way too many opportunities for a Mommy to exercise patience. (good practice, I guess.)
Pros:
Exhaustion ultimately leads to sleep.
Despite the 1-2 hours it took for all three to fall asleep (overtired!), once they did, they slept hard for 2-3 hours. All at the same time. Bliss.
They slept through our crazy loud printer. Slept through me opening their doors and taking these pictures. Slept through lights being turned on...music played..."white noise" fans turned off...all in a quiet effort to wake them up "naturally" which we've learned is far better than waking them with a gentle nudge.
So yesterday, I enjoyed a quiet afternoon and an evening with three much happier, more cheerful children. (And a more cheerful Mommy too.)
Not quite as quiet today...but that is okay. Memories of yesterday linger. :)

I still love pumpkins in January--
Just a quick post to share a really yummy recipe. I mean so yummy that you'll be sad when they're gone.
A friend gave a plate of these scones to us on Christmas Eve...and I am so glad that she did. You see, my friend Shawna is always talking on her blog about these pumpkin scones she gets at a favorite place in New York...and every time I read about them, I want to fly to visit her just to taste these scones that MUST be absolutely fantastic. (Well, that and to get to visit with one of my dearest friends!)
So my friend Kim made these for us and I think they're delicious and I can't wait for Shawna to try them and tell me if they're as good (or better!) as the ones in New York! They have just the slightest hint of pumpkin--so it's not overpowering or out-of-season--just really, really good! And the cranberry butter is just yummy...a perfect complement!
Pumpkin Scones with Berry Butter2 1/4 cup flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup chilled butter, cut in small pieces
1 egg, beaten
1/4 cup brown sugar
1 1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1/2 cup pumpkin puree
1/3 cup milk
1. Combine dry ingredients. Cut in butter with pastry blender until mix resembles coarse crumbs. Make a well in the center of the dry mix and set aside.
2. Combine egg, pumpkin puree, and milk in another bowl. Add to the dry mixture all at once. Stir with a fork until moistened.
3. Turn dough out onto a lightly floured surface. Knead 10-12 times until nearly smooth, adding more flour if necessary. Pat into an 8-inch circle. Cut into 12 wedges. Place on an ungreased baking sheet and bake at 400 degrees for 12-15 minutes or until golden brown. Remove the scones and cool on wire rack for 5 minutes. Serve warm with berry butter.
Berry Butter
2 Tbsp. dried cranberries or blueberries
1/2 cup butter
1/2 cup boiling water
3 Tbsp. powdered sugar
1. Combine berries and water in a small bowl. Let stand for 10 minutes. Drain well and finely chop.
2. Stir together butter, powdered sugar, and berries. Cover and chill at least one hour before serving.

Check!
Well, number 26 on my list said that I wanted to learn more about photography...and as of today, I'm on my way to that end!
I was able to sign up for Karen Russell's online workshop "Snapshots of a Good Life"...an "early but late" Christmas gift! (Early because we registered way back in October or November...late because it starts today!) I was thrilled to be able to register because it sold out in less than 4 minutes!

Have you heard?
Just last week, I got a notice from my favorite magazine, Cottage Living. As of the Nov/Dec 2008, the magazine will no longer be published. I am so sad. I have subscribed from the very first issue (still my favorite issue ever), and I will miss finding this magazine in my mailbox. I love the decorating ideas...the "Cottage Industry" article...the recipes (of course!)...and finding out about neat places to visit in different cities.
The good news is that because I got a great renewal offer about a year or so ago, I still had 18 months of my subscription left...so now I need to figure out whether to transfer that to my Southern Living account (which is about to end)...or try out Cooking Light again. Or maybe Coastal Living? Hmmm.
I did notice that the editor of Cottage Living moved to be the editor of Southern Living. But no formal word about why the magazine was coming to an end. Some of my high school friends have worked for the magazine in the past few years...so maybe we can get some "inside info"! (pssst...hey Loren, Emily...any details???)

Reflections...
A year ago today...I knew Brent, my children, and one or two names of people that I knew of...but didn't really know. Today, I am blessed with many amazing friends, a Bible study, a church, neighbors...and still, my precious family.
A year ago today...we were living in the temporary lodging facility on base which was very small for a family of five...but we learned that we don't need much! Today, we are more than blessed to be living in the house that we dreamed of and spent so much time and effort planning.
A year ago today...I wasn't sure that I would ever like living in a small town. Today, even thought it's not perfect, I know that I will be sad to leave this place and that I will miss it...at least, parts of it.
A year ago today...I was looking forward to travelling to Asheville to see my family and get out of OK! Today, I'm looking forward to my Mom visiting here in a few weeks!
A year ago...my precious baby was not quite three months old. Sweet as can be. Super sleeper. Wonderfully chubby. So very easygoing. A true delight.
Today...Madeleine is almost 15 months. She is a beginning to walk more and more. She likes to wake up with the sun like her big sister. She is happy as long as she is doing something "big". (No board books for her...she knows they're for babies!) She delights in being with her older siblings. She tries to repeat everything we say. She loves to eat fruit...but is probably our pickiest eater for this age. She is wonderfully snuggly and kissable. The way she says Ma-mee and Da-dee melts my heart. She loves to blow kisses.
A year ago...my little boy was just a little over two. He could talk up a storm. He began to love Thomas the Tank Engine. Every time he heard an airplane, he'd say, "Is that Daddy?" He held tightly to my hand anywhere we went.
Today...Nathanael has been three for almost three months. He is potty-trained--hurray! He STILL loves Thomas the Tank Engine. He is a natural story-teller. He loves Chitty Chitty Bang Bang! He loves to sing. (We walked through Williams-Sonoma last week--all the while he sang "Zuckermans Famous Pig" from Charlottes Web.) He likes golfing with his Daddy. He likes to ask us a long list of "Do you like...?" His favorite color is blue. He still loves to hold my hand when we go somewhere. He struggles with his self-control, but he's trying to work on it. He likes to give me a big hug and a big kiss and then a little hug and a little kiss when I tuck him in bed at night. He says Hadleigh is his best friend.
A year ago...my firstborn was four. She was beginning to love dressing up. She loved to kiss Madeleine in her cradle. She adored playing on the playground. She looked forward to going to Bible study. She liked watching Little Einsteins. Her favorite book was If You Give A Mouse A Cookie.

Today...Hadleigh is five. She loves pretending to be a princess. She enjoys playing with jewelry and paper dolls. She wants to be able to carry Madeleine around. (Madeleine's not quite a fan of that, though.) She loves "doing homeschool". She brings Madeleine her blanket whenever she cries. She still loves to be outside. She always wants to help me in the kitchen. She loves tea parties. Her favorite books are about princesses: right now, Cinderella and Snow White. She loves to golf with her Daddy. She is learning more and more about having a soft and submissive heart. She loves riding her bike. She helps me set the table. She loves watching Mary Poppins and Cinderella. She is a wonderfully mommy to her baby dolls. Her favorite color is still pink. She has become a pickier eater in the last year...but definitely has a genetic sweet tooth! She is still a bit shy in a new situation. She says Nathanael is her best friend.
I'm thankful to be able to look back...reflect...and learn.
